En la elaboraci\u00f3n del queso se utilizaba coloc\u00e1ndolo sobre una especie de cuenco o tablas llamados <em>presugas<\/em>. Son de tama\u00f1o variable y no tienen base.<\/p>\n\n\n\n<p>Los <em>arnios <\/em>se llenan de cuajada con copete para que sigan permaneciendo altos tras la p\u00e9rdida de suero que se da de forma continuada. Tras unas horas deben ser volteados, para voltearlos de nuevo al d\u00eda siguiente, as\u00ed van soltando el suero y fermentando para adquirir su forma original. Tras dos d\u00edas de volteos el queso tendr\u00e1 su forma correcta, pero el momento exacto de la retirada del <em>arniu<\/em> solo lo determina el saber tradicional del d\u00eda a d\u00eda.<\/p>\n\n\n\n<p>Algunos <em>arnios<\/em> los hac\u00edan con la corteza de los \u00e1rboles, las ataban con una cuerda para darle al queso la forma cil\u00edndrica. En la actualidad tienen que estar fabricados de acero inoxidable o de pl\u00e1stico para uso alimenticio, no obstante la <em>presuga<\/em> sigue siendo de madera.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Identificaci\u00f3n del recurso:\u00a0Arniu (Molde para el queso).
